``There is a magic moment when after a weekend of hard work, everyone leaves and I stay in the restaurant, I stop in front of the glass windows that looks out over the street in absolute silence and I can confirm that I am a happy man. I walk around the restaurant thinking, only thinking. I look at everything around me, like it was the very first time and I remember some pleasant detail during yesterday`s service, a client that enjoyed his meal or the client that told me how friendly and professional the person was that attended his table. And so, with the satisfaction of another day finished and having done what I always wanted to do, I close the door behind me and leave for home´´
